Takahiro Kosaka's vegan cuisine offers a new French experience that combines originality with traditional Japanese flavors. His dishes are prepared with fermented ingredients, brewed over time, and utilized with seasonal ingredients. With a deep understanding of food diversity and vegan cuisine, the ideas that flexibly evolve to meet the needs of guests. The course meals can also be enjoyed with tea pairings.
