French cuisine using seasonal Japanese ingredients and unique fermentation.
We use familiar ingredients that have been eaten in various areas of Japan for a long time.
In addition to the seasonal theme, Chef Takahiro Kosaka will prepare a dish full of originality that has a new story and reinterpreted Japanese food with French cooking techniques.
